Blackberry/Ginger/Sage Smash

3 oz Plymouth Gin
1 1/2 oz Fresh lime juice
3/4 to 1 oz simple syrup
5 blackberries
2 to 3 peeled & sliced ginger pieces
fresh sage 
Smash 3 blackberries, ginger slices & sage leaves in bottom of shaker with muddler.  Add ice until almost filling the shaker.  Add liquid ingredients & shake until very cold.  Pour everything into mason jar or other type of short glass.  Garnish w/2 blackberries & sage sprig.

2 oz Death’s Door Gin

Freshly peeled ginger slices
Several fresh mint sprigs
Muddle several ginger slices in bottom of  shaker until smashed.  Add mint, gin, lime & simple syrup.  Add ice to shaker & shake until freezing.  Pour everything (including ice) into short glass.  Add more ice if desired.  Top w/fresh mint sprig…….pure heaven!!!!

Pink Grapefruit and Basil Margarita on the Rocks
Ingredients
1 1/2 oz. silver Patron tequila 1 oz. fresh squeezed red grapefruit juice 1/2 oz. fresh squeezed lime juice 1/2 oz. Patron Citronge
Splash w/sparking water  5 fresh basil leaves
Sliced limes
Ice cubes
Directions
Muddle 4 basil leaves in martini shaker
Fill shaker 1/2 full with ice cubes
Add Patron Silver tequila, grapefruit juice, lime juice, Patron Citronge & shake vigorously
Pour into chilled, ice filled glasses. Garnish each margarita with 1 basil leave and thin slice of lime.

2 oz Knob Creek Bourbon
3/4 oz Grand Marnier
1/2 oz Grenadine (preferably homemade or by Angostura)
1/4 oz Pernod or Ricard pastis
1/2 oz fresh lemon juice

Bartenders wet a sugar cube with a drop of bitters and muddle it with a handful of strawberries, a few leaves of aromatic mint, and crushed ice. Next, they add the limoncello and a few fingers of Maker’s Mark, and give it a vigorous shake.

Queen’s Park Swizzle
3 oz amber rum ( I like Oronoco, Pyrate or Appleton Estate)
1 oz dark simple syrup (make w/organic cane sugar)
1 oz fresh lime juice
Angostura Bitters
fresh mint
Combine rum, simple syrup, lime juice & a few sprigs of mint in a tall glass filled w/ice.  Using a long bar spoon, swizzle spoon in palms of your hands until glass is frothy.  Alternately, use an ice-filled shaker if you do not have a long bar spoon & pour into tall ice-filled glass. Top w/several shakes of Angostura Bitters & additional fresh mint.  I used apple mint which imparts a lovely flavor!  Really great on a hot summer’s day!

2 oz Aviation Gin (Small’s is also tasty)
1 oz fresh lemon juice
1 oz honey syrup (equal parts honey & hot water)
fresh hyssop (rosemary, thyme, basil & mint are also great)
Combine all liquid ingredients in an ice-filled shaker.  Shake well & pour into cocktail coup.  I like to add a large square ice cube to keep it extra cold!  Garnish w/fresh hyssop (nice licorice flavor)!!!!!

2 oz Plymouth Gin
1 oz St. Germain Elderflower Liqueur
1 oz fresh lime juice
1/2 oz simple syrup
fresh mint
seedless cucumber chunks
Muddle several cucumber chunks w/several spearmint leaves in bottom of shaker.  Add gin, St. Germain, simple syrup and lime juice.  Add ice and shake until very cold.  Strain into martini glass and top w/cucumber slice and fresh mint sprig.  Enjoy!
