Queen’s Park Swizzle
3 oz amber rum ( I like Oronoco, Pyrate or Appleton Estate)
1 oz dark simple syrup (make w/organic cane sugar)
1 oz fresh lime juice
Combine rum, simple syrup, lime juice & a few sprigs of mint in a tall glass filled w/ice. Using a long bar spoon, swizzle spoon in palms of your hands until glass is frothy. Alternately, use an ice-filled shaker if you do not have a long bar spoon & pour into tall ice-filled glass. Top w/several shakes of Angostura Bitters & additional fresh mint. I used apple mint which imparts a lovely flavor! Really great on a hot summer’s day!
